That books seems a little clinical for me. I prefer to experiment, and find out what works and what doesn't. Cook enough, and pay attention to what you're doing, and you can eventually do away with recipes and make up your own variations.

The beauty of this book is that it gets you to the last stage much quicker and frees you up to invent based on solid core principles.

That's a great idea, but for both of the searches I've done so far I just end up at my favourite book buying place anyways. The Book Depository is very rarely beaten.

That’s why I said ‘for me’ because I can see the logic, but it removes the sense of fun and discovery from cooking. I think I would enjoy reading the book, but wouldn’t want to lose the sense of mystery wondering if a dish will work or if flavours match.
